Just as a painter must have the most exquisite colors,
a chef lives to work with the purest of flavors.
To do so, I use the best, most natural raw materials
possible: organic flour for my breads, choice “blue-ribbon”
pork for my delicatessen meats. My poultry comes from
Ain, my almonds from Provence, my fruits and vegetables
from the surrounding countryside. The Forville Market
in Cannes is my favorite palette! I work with the region,
with the people of the region, for the people of the
region and for those the world over, and above all I
work with the determination to present you with a product
of the purest, most authentic quality. “The real
thing,” as you might say.
